Keto Milk Chocolate flavoured with fine Herefordshire cider brandy from Artistraw Cider just up the road from me.
The cocoa beans are lightly roasted, cracked and winnowed as usual and then the cocoa nibs get soaked in the cider brandy for several weeks. The chocolate is made with these nibs and they carry a lot of that brandy flavour with them, especially those oak barrel aged notes but without any alcohol or alcohol flavour.
As the chocolate melts on your palette it releases different waves of flavour and complexity from the cider brandy and the lightly roasted cocoa. It's quite adult and a little bit posh.
